Abstract

Red yeast rice (angkak) is one of the potential natural colorants for substituting synthetic red colorant. In this research angkak is used as a natural coloring agent in soursop-sugar palm fruit leather. This research aim to know the effect of different concentration of angkak powder on physical, chemical and organoleptical characteristics of soursop-sugar palm fruit leather and to know the best concentration of angkak addition. This research used Completely Randomized Design (CRD) with 6 treatments of angkak addition and 3 replications, subsequently A (0%), B (0,5%), C (1%), D (1,5%), E (2%) and F (2,5%). The result showed that the different concentration of angkak powder had a significant effect on organoleptical properties (color, taste and texture), moisture content, ash, pH, antioxidant activity, color analysis, total plate count, total soluble solid, and had no significant effect on aroma, fruit leather folds rate and total acid. Soursop-sugar palm fruit leather with 1% angkak powder concentration is the best product based on organoleptic and antioxidant activity. Based on organoleptic test the addition of angkak powder gave a clear color difference to the fruit leather with value of color 4,20, aroma 3,62, taste 3,95 and texture 3,80, and the highest antioxidant activity (40,43 ppm). Physical and chemical characteristics of fruit leather with 1% angkak powder are moisture content 11,05%, ash 1,08%, fruit leather folds rate 5,00, total acid 0,453%, pH 4,3, color analysis 83,72 oHue, total plate count 9,3 x 102 cfu/g, total soluble solid 44,00obrix, total sugar content (sucrose) 7,14%, lovastatin 0,7159 ppm and dietary fiber content 12,41%.
