Abstract
Abstract Research isolation and characterization of bacteria producing an alkaline protease enzyme of curds was carried out from October 2016 to January 2017 in the Laboratory of Microbiology Research Department of Biology, Faculty of Mathematics and Natural Sciences, University of Andalas, Padang and Testing Laboratory of Veterinary Investigation Centres Regional II Bukittinggi. This study used an experimental method, the data obtained from the study were analyzed and displayed in the form of images, tables and graphs descriptively. Isolation of bacteria producing protease enzyme alkaline from buttermilk, found eight isolates indicated as a producer of protease alkaline by code isolates BKT-11, BKT-12, BKT-19 BKT-20 ALP-01, ALP-06, ALP-10, and ALP-11. The characters are all alkaline protease-producing isolates from whey different from each other and biochemical tests showed that isolates BKT-11, BKT-19 BKT-20 ALP-10, and the ALP-11 is Enterobacter sp. ALP-01 isolates of Lactobacillus sp. Isolates BKT-12 and ALP-06 is Staphylococcus sp. Key word : Isolation, characterization, alkaline protease, curd.
