Abstract
The rapid growth of the world's population significantly impacts primary needs, especially food. Indonesia is the largest country in Southeast Asia, with the highest Muslim population of 87% of the total population of Indonesia. Muslim residents must consume halal food per Islamic religious law and regulated in the MUI fatwa. Halal food is marked by the existence of halal labeling or certification by LPPOM MUI. Food is halal if it comes from ingredients that are not haram, free from contamination by unclean or haram elements, ingredients that are not intoxicating and dangerous and deadly, and ingredients that do not come from parts of the human body. The critical halal point is seen from the material, the worker, the facilities, the processing process, and document. The Padang City Government slaughterhouse is the only slaughterhouse that has halal certification in the city of Padang. The average demand for beef of more than 100 heads per month indicates that many clients are subscribed to this abattoir. A halal assessment model is needed in the slaughtering process to improve the quality and credibility of abbatoirs and prepare for the future halal slaughterhouses, starting from the acquisition of cattle/buffalo from the supplier to the final distribution process. This halal assessment model is expected to provide a more detailed reference for the Padang City Government slaughterhouse to develop products from the halal side. Then, the halal assessment model can be used by LPPOM MUI West Sumatra for slaughterhouse audits and evaluations. The final goal is for people to feel satisfaction and comfort in consuming beef that has been guaranteed halal.
