Abstract

ABSTRAK Penelitian ini dilakukan untuk melihat viskositas larutan ekstrak galaktomanan kolang - kaling pada berbagai konsentrasi dan suhu larutan. Galaktomanan kolang-kaling merupakan salah satu jenis hidrokoloid yang memiliki rantai manosa dan percabangan galaktosa. Analisis statistik yang digunakan adalah persamaan regresi power (kuadratik). Hasil dari analisis proksimat ekstrak galaktomanan kolang-kaling memiliki kadar air sekitar 6,7%, kadar abu 1,0%, kadar lemak 4,7%,dan kadar protein 0,5% serta serat kasar sekitar 19,4%. Kadar galaktoman dari ekstrak yang dihasilkan sekitar 80,5% dan rendemen yang dihasilkan sekitar 4,6%. Viskositas larutan galaktomanan kolang-kaling semakin meningkat pada konsentrasi yang lebih tinggi pada suhu pengamatan (20, 30, 40, 50, 60, 70, dan 80oC). Sebaliknya, viskositas akan menurun jka suhu larutan ekstrak galaktomanan kolang-kaling meningkat dan ini berlaku pada seluruh konsentrasi ekstrak galaktomanan kolang-kaling (0,5, 0,75, 1,0, 1,25, 1,5, 1,75 dan 2,0%). ABSTRACT This research was conducted to see the viscosity of the galactomannan extract of kolang - kaling at various concentrations and solution temperatures. Galactomannan kolang-kaling is a type of hydrocolloid that has a mannose chain and galactose branching. Statistical analysis used is the power regression equation (quadratic). The results of the proximate analysis of the galactomannan extract of kolang-kaling have a water content of about 6.7%, ash content of 1.0%, fat content of 4.7%, and 0.5% protein content and 19.4% crude fiber. The galactoman content of the extract produced was about 80.5% and the yield was about 4.6%. The viscosity of the galactomannan solution increased at higher concentrations at the observed temperatures (20, 30, 40, 50, 60, 70, and 80oC). On the other hand, the viscosity will decrease if the temperature of the galactomannan extract solution increases and this applies to all concentrations of the galactomannan extract (0.5, 0.75, 1.0, 1.25, 1.5, 1.75 and 2.0%).
