Abstract
Pandan suji leaves (Dracaena angustifolia) are plants that can produce green color because it contains chlorophyll. Aloe vera jam consist of a paste with high in sugar and made from aloe vera gel but this jam needs additional color. The aim of this study was to determine the effect of the addition of pandan suji (Dracaena angustifolia) leaf extract to the characteristics of aloe vera jam, and was to determine the best Aloe vera jam by considering the physical and chemical characteristics of jam. The method used is an experimental method with a Completely Randomized Design (CRD) consisting of 5 treatments and 3 replications. The treatments used were the addition of pandan suji leaf extract 0%, 5%, 10%, 15% and 20%. The results showed that the most preferred product based on the organoleptic test was Aloe vera jam with treatment C (10% Pandan Suji Leaf Extract) with a preference for color 3.50, taste 3.23, aroma 3.27, texture 3.73. , moisture content (24.48%), ash content (0.13%), pH value (3.17), total sugar content (54.17%), total chlorophyll (1.64 mg / L), antioxidant activity (30.45%), total dissolved solids (75.52%), water activity (0.571) and total plate number (3.7 x 102 cfu / g).
