Abstract
Coconut oil has been known to contain fatty acids in the form of lauric acids, also contain vintamin A, D, E and K, polyphenols, and lactic acid bacteria that has ability as and antioxidant. In this research, the total phenolic content and antioxidant activity in the copra oil and virgin coconut oil as the samples was determined with DPPH method used spectrophotometer UV-Vis. Polyphenols extraction was performed by using liquid-liquid extraction with n-hexane and methanol as a solvent to obtained the residue to be tested. Total phenolic content tested by spetrophotometric UV-Vis method with the wave length 765 nm and got the value of total phenolic content about 28,41 mg/100 g and 32,89 mg/100 g in VCO. The result showed that VCO has better free radical damping ability than copra oil with IC50 324,03 mg/L compared to 494,14 mg/L in copra oil. Determination of moisture content tested by AOAC method and got the moisture content in VCO is equal to 0,0992% while in copra oil moisture content is equal to 0,2205%. Moisture content that obtained is suitable to the StandarnNasional Indonesia (SNI). Keywords: virgin coconut oil, copra oil, antioxidant activity, total phenolics
