Abstract

Carotenoids can degraded by thermal degradation, oxidation, photo-degradation, and enzymatic reaction. Thermal degradation of orange sweet potato carotene was studied to determine the effect of heating time on the formation of aromatic compound. Thermal degradation of carotene was carried out at 140 oC for 1, 2, 3, and 4 hours. The analysis included moisture content, color, total of carotene, and analysis of volatile compounds using GC-MS. GC-MS analysis of carotene degradation showed that the aromatic compounds formed are β-ionone and dihydroactinidiolide (dhA) at retention time of 14,05 and 14,8 minutes.The formation of β-ionone and dihydroactinidiolide compounds increased as the total of carotenes decreased. The result showed that heating carotenes at 140 oC for 4 hours caused carotene to degraded by 93%. As a result, the best treatment for the formation of β-ionone and dhA compounds was heating at 140 oC for 4 hours.
