Abstract

Palm industry has high economic value because almost all parts of the plant can be utilized by the community. Palm sugar derived from nira that is tapped from male flowers is the product of the greatest economic value. Raw palm sugar has a very low sale value when compared to the production of derivatives purchased by palm sugar companies. This can benefit the farmers. Beside that, the industry needs to improve the product development. In this case, the greatest value added will be determined for each product. Jorong Talaweh Nagari Labuah Gunuang where is located in Lareh Sago Halaban is the place that has palm as their needs in daily. Around 65% people are farmers of palm. The method used to analyze the value chain of the sugar palm industry in the Lareh Sago Halaban is a qualitative descriptive method, which will describe the conditions contained in the sugar palm industry process. Furthermore, the value added calculation is performed using the Hayami method to see which palm sugar derivative products can produce the highest value added and how much is the level of profit from the acquisition of value added for each product. The actors involved in the process of making sap products are farmers who harvest the nira so that the nira can be made into products and then packaging it to be sent to distributors which will be distributed to resellers for purchasing by consumers. After conducting the research, a value chain analysis was obtained that used mapping diagrams to determine actors, namely nira water producing farmers, manufacturer, distributors, resellers, and consumers. After that, it is analyzed using a value chain diagram which describes the product description of the palm sugar industry in Lareh Sago Halaban which consists of primary activities and supporting activities. After knowing the actors involved and the processes that occur, the calculation of value added using the Hayami method is carried out with the influencing factors, namely product prices, other input prices, and raw materials. The product that produced the highest value added is palm syrup, amounting to Rp4,632 / L for nira input.
