Abstract
Dapur Rendang Yonica is one of the Small and Medium Enterprises (SMEs) in Padang, West Sumatra, which produces tuna based products. The products are tuna rendang, tuna lado hijau, tuna abon, tuna bone cracker, and tuna skin cracker. The company products have been certified for SPP-IRT certification from National Agency of Food and Drug Control. For the next stage, the company wants to obtain the SKP (Processing Feasibility of Producing Foods) certification from Ministry of Maritime Affairs and Fisheries. The company have to implement the Good Manufacturing Practices (GMP) and Standard Sanitation Operating Procedures (SSOP) to meet the requirement of the certification. The current condition of the company production floor can cause the occurring of cross-contamination which is contradicting with the requirement. Besides, the company is also lacked of sanitation facilities then the company unable to implement the SSOP. The company also has no standard operating procedures yet. All the activity in the company is carried out by the instruction of the owner. This final project is helping the company to achieve the desired certification by designing the facility layout and Standard Operating Procedures (SOP) to meet some of the certification requirements. The design of facility layout is done by using computer aided layout which is blocplan application. The design of SOP is carried out based on the regulation from the National Agency of Food and Drug Control, and Ministry of Maritim Affairs and Fisheries. The results of this final project are facility layout and SOP. The designed layout is the selected alternative layout from blocplan with the R-score of 0.77. It has six departments and nine supporting facilities with the size of 16.5 m x 6 m. The designed SOP consists of sanitation and production SOP. Keywords: layout
