Abstract
In Padang City, there is currently no available data regarding the generation, composition, and characteristics of household food waste. This study aims to analyze the amount, composition, and characteristics of household food waste in Padang City. Additionally, it seeks to identify suitable food waste management alternatives based on the Food Recovery Hierarchy. The research was conducted in three districts of Padang City over a period of eight consecutive days, following the Indonesian National Standard (SNI) 19-3964-1994. According to SISPN, the total amount of food waste generated in Padang City is 378,000 kg/day. This study found a total generation of 321,518.12 kg/day. The average specific generation of household food waste in Padang City is 0.36 kg/person/day by weight and 1.113 liters/person/day by volume. The composition of household food waste includes vegetable waste (16.65%), rice waste (16.34%), fish waste (12.97%), poultry waste (12.82%), fruit waste (12.13%), tea dregs (10.71%), and meat waste (10.50%). The average bulk density of household food waste in Padang is 0.132 kg/L, with a moisture content of 29.87%, volatile solids at 64.61%, ash content at 4.13%, fixed carbon at 1.39%, a C/N ratio of 24.20, and a biodegradability fraction of 59.82%. Recommended food waste management strategies for the household sector in Padang City, based on the Food Recovery Hierarchy, include source reduction, food donation, animal feed, industrial uses, and composting. Non-recoverable waste should be disposed of at the landfill.
