Abstract

Borax is a chemical compound with the formula of Na2B4O7.10H2O in the form of white crystals, odourless, and stable at normal temperatures and pressures. The addition of borax to food aims to increase crispness, increase suppleness, provide a dense texture, and provide a savoury and long-lasting flavour. Abuse use of borax as food additives can cause health problems such as respiratory problems, digestive disorders, reproductive system disorders, eye disorders and skin irritation, which can lead to death. This research aimed to identify borax found in tofu sold in Pasar Raya, Pasar Pagi Juanda, Pasar Tanah Kongsi, Pasar Bandar Buat and Pasar Lubuk Buaya. This research was conducted in the Chemistry Laboratory of the Faculty of Medicine of Andalas University from December 2018 - March 2019. This was a descriptive study with 34 samples taken from 5 different markets in Padang City. The instrument used in this study was a borax Rapid test kit. The results of this study showed that the highest sample of tofu (32.35%) came from Pasar Raya Padang, while the least sample of tofu (5.88%) came from Pasar Tanah Kongsi. Pasar Bandar Buat was the market with the highest rate of borax-containing tofu (71.43%), while all sample from Pasar Tanah Kongsi did not contain borax. The conclusion of this study was that less than half of the tofu samples studied positively contain borax and were most commonly found in Pasar Bandar Buat. Keywords: Borax, tofu, rapid test kit.
