Abstract
Garlic is one of the most useful and popular onions in Indonesia. Garlic has many advantages for our life. The usage of garlic that is most popular in Indonesia especially in West Sumatera is to cook spices for cuisine in West Sumatera restaurants. Garlics needed by restaurants in West Sumatera are usually peeled garlics because it is not enough time to peel the large number of garlics for cooking spices. This situation gives the opportunity for household industries to provide a lot of peeled garlics. One of household industries which produces peeled garlics in West Sumatera especially in Padang is Usaha Kelas Menengah (UKM) Ulak Karang. UKM Ulak Karang has two processes of garlic peeling, namely manual and garlic peeling by using machine. Observation using man and machine process chart shows that the problem faced by UKM Ulak Karang is set up time. The use of machine is only 15% and idle time of machine 85%. The worker spends 76% of his work time for setting up, 15% for idle time, and 9% for allowance. Set up time in peeling garlics greatly affects the number of garlics that can be produced every day. Minimizing the set up time can speed up the completion of the process so that production target can be achieved. It can also increase volume of peeled garlics per day and income for UKM Ulak Karang. Method used to minimize set up time is Single Minute Exchange of Die (SMED). This method is implemented directly to worker in UKM Ulak Karang. The result is set up time reduction of 58.29% and production output increasing of 71.55%. Key Words: Garlic Peeling, Set Up Time, SMED
