Abstract

Tofu is a food which made from soybean. It contains water and proteins. Therefore, microbes could grow easily. It makes tofu could not be stored for a long time. In order to increase the stored time, suplements are usually used. Even though some of the suplements are dangerous, people still use them. One of the suplements is formalin. Formalin is a chemical substance for preservation which is poisonous and dangerous for human’s health. The objective of this study was to identify the formalin in tofu which are sold in various markets in Padang. Those are Pasar Raya, Pasar Alai, and Pasar Siteba. This research was started by a qualitative examination which held at Laboratory of Biochemistry, Faculty of Medicine, Andalas University, then followed by a quantitave examination at Laboratorium Kopertis Wilayah X Padang, from September 2015 to January 2016. This study was descriptive. The samples were 45 tofu which attained by applying total population sampling. The instruments which used in this study were Formalin Test Kit ET and spectrophotometry. The result of this study has showed that among the 45 samples, all of the samples gave negative result which means all the samples did not contain formalin. Based on this study, it could be concluded that all of the tofu in Pasar Raya, Pasar Alai, and Pasar Siteba were not contain formalin. Keywords : Tofu, Formalin, Food suplements
