Abstract
ABSTRACT Lead is a kind of chemical compound that has many benefits in daily life especially for industry purpose, but lead also has some bad impacts in its use. Lead can contaminate the environment and can poisoning the living organisms. Lead can cause various disorders to the body and also organs such as hematopoietic system, neurological, endocrine, renal, gastrointestinal, hematological, and reproduction. Contaminated food is one way for the lead to get into the human body and the food was susceptibility contaminated with lead are the street food. This research aims to determine the lead ‘s content analysis in shrimp snacks (rakik udang) which is sold around Pasar Ulakan Tapakis, Padang Pariaman. This research was begun with a qualitative examination held at the Laboratory of Biochemistry Faculty of Medicine, Andalas University and the quantitative examination was held at the Laboratory of Environmental Engineering, Andalas University from August 2015 - February 2016. This research is a descriptive and used 21 samples which have the equal number with the population (total sampling). Instruments used in this research are the lead test kit and atomic absorption spectophotometer. The result showed that from 21 samples, it was found that all samples (100%) contained lead but the level was still below the limit that set by the Head of BPOM No. HK.00.06.1.52.4011 2009. The level of lead are found at 0,037 ppm - 0.202 ppm with average level of 0,112 ppm. Based on these result it can be concluded that all samples are proven containing lead but the level is still below the limits that had been stipulated and safe to consumed.
