Abstract
Abstract Research on the isolation and characterization of the protease enzyme acid-producing bacteria of the curd has been done in the Research Laboratory of Microbiology Department of Biology, Faculty of Mathematics and Natural Sciences, University of Andalas and Testing Laboratory Disease Investigation Center Region II Bukittinggi in October 2016 to January 2017. The study the use of the experimental method, the result obtained from the study were analyzed and displayed in the form of images, tables and graphs descriptively. Results of this study was obtained bacteria that produce acid protease by 5 isolates found in curd Alahan Panjang and Bukittinggi. Bacterial isolates that have the highest proteolytic index is BKT-05. Character of the five isolates BKT-05, BKT-09, BKT-13 ALP-01, and the ALP-03 is Gram positive. Three isolates motile and two isolates are not motile. The three negative and two positive catalase test on catalase test. Biochemical tests showed the acid protease-producing bacteria genus are Lactobacillus and Staphylococcus. Key word: isolation, characterization, acid protease, curd
