Abstract

Anthocyanin coumpound have been successfully extracted using ethanol solvent that has been acidified with acetic acid and citric acid until pH 1,5 of red leaf buds (Syzygium campanulatum Korth.). The extract is identified by UV Vis spectrophotometer (260-800 nm) and obtained two peaks is 263,5 nm (UV) and 528 nm (Visible) for extract the ethanol solvent + acetic acid pH 1,5. Further treatment is carried out with HPLC-DAD (λ 516 nm) and obtained two peak that showed two major peaks assumption that one of the derivates of pelargonidin and one peak again need analysis futher. Level of total monomeric anthocyanins obtained as 133,9250 mg/L in ethanol + acetate acid extract and 38,2961 mg/L in ethanol + cytric acid. Anthocyanin is stable at pH 1 to 11. Highest anthocyanin color degradation due to heating to extract contained in the ethanol + cytric acid by temperature 100 oC with a percentage of 13,91% degradation. For the antioxidant test extract ethanol + acetic acid and extract ethanol + citric acid is extract weak with IC50 values of 15.450 µg/mL and 29.238 µg/mL.
