Abstract

This research has been carried out in the Laboratory of Agricultural Technology Faculty of Agricultural Technology, Andalas University, Padang in April-September 2013. The purpose of the study was to determine the influence of multiple concentration of whiting in the manufacture of dried candied starfruit generated. The design used in this study is completely randomized design (CRD) with 5 treatments and 3 replications. Observational data obtained using ANOVA test (Analysis of Variance), if significantly different test followed Duncan's New Multiple Range Test (DNMRT) at 5% level. Treatment of this study are as follows: A (control 0), B (concentration of 0.1% solution of whiting), C (concentration of 0.2% solution of whiting), D (concentration of 0.3% solution of whiting), D (concentration of 0.4% solution of whiting). Observations were carried out on dried candied starfruit products include: water content, sugar content, pH, total acid, vitamin C and organoleptic tests. Organoleptic test was conducted on the color, aromatic, flavor, texture, and appearance. Giving whiting solution at different concentrations also provide a significantly different effect on the resulting dried candied. Keywords: Starfruit, Lime Betel, candied dried.
