Abstract

Clove leaf essential oil (Syzygium aromaticum L) as antioxidant and antibacterial agent has been reported by previous researchers. In order to increase its activity, Clove leaf essential oil were synthesized in nano size using zein protein as the carrier. Consentrations of zein-clove leaf essential oil was prepared with a zein concentration of 150.0 mg/100 mL, while clove leaf essential oil was made with various concentrations of 0, 200, 400, 600, 800, 1000, 1500, and 2000 mg/100mL, and 20 minutes sonication time. Antibacterial activity was tested using disk method to against Staphylococcus aureus. High antibacterial activities indicated the optimum formula of zein-clove leaf essential oil nanoparticles. The result of data processing showed that clove leaf essential oil with concentration of 800 mg/100 mL was the best formula. This formula showed antibacterial inhibition value of 0.967 mm with three main compounds, namely trans-β-caryophyllene, chavibetol, dan α-humulene.
